  • 1.5 lbs Jumbo Shrimp 16/20 count, peeled and deveined, tails-on (680g)
  • 1/3 cup Honey Wildflower or Clover (80ml)
  • 2 tbsp Olive Oil Extra Virgin (30ml)
  • 2 tbsp Lemon Juice Freshly squeezed (30ml)
  • 3 cloves Garlic Minced
  • 1/2 tsp Red Pepper Flakes (1g)
  • 2 stalks Green Onions Finely sliced scallions
  • 2 wedges Fresh Lemon For serving

Equipment

  • 1 Grill (Gas or Charcoal)
  • 8 Bamboo Skewers Soaked in water for 20 minutes

Method
 

Preparation
  1. Whisk honey, olive oil, lemon juice, garlic, and red pepper flakes. Reserve half for basting later.
  2. Toss shrimp in the remaining mixture for 10-15 minutes.
Grilling
  1. Thread shrimp onto skewers and grill over medium-high heat for 2-3 minutes per side until char marks appear.
  2. Brush with reserved glaze during the last minute until sticky and glossy. Garnish with scallions and lemon.

Notes

Always soak wooden skewers for 20 minutes to prevent burning.
Do not overcook; shrimp are done when they turn opaque and reach 120°F.
