  • 2 cups (180g) Old Fashioned Rolled Oats Not instant oats
  • 1 cup (250g) Creamy Peanut Butter Stirred well
  • 1/2 cup (170g) Dark Honey Or maple syrup
  • 1/2 cup (80g) Mini Semi-Sweet Chocolate Chips
  • 1/2 cup (60g) Ground Flax Seeds Brown or golden
  • 1/2 tsp (3g) Coarse Sea Salt Plus extra for topping

  • 1 Spatula
  • 1 Cookie Scoop 1-tablespoon size

Method
 

Preparation
  1. In a large bowl, combine the rolled oats and ground flax seeds until the brown flecks are evenly distributed.
  2. Fold in the creamy peanut butter and dark honey. Stir until the mixture is thick, tacky, and well-combined.
  3. Gently fold in the mini chocolate chips and sea salt grains until evenly studded throughout the dough.
  4. Refrigerate the mixture for 30 minutes to firm up. This prevents the dough from sticking to your hands during rolling.
  5. Using a scoop, roll the dough into 1-inch spheres. Place in a shallow bowl and finish with a tiny pinch of extra sea salt.

Notes

Use wet hands if the dough is too sticky to roll.
Swap peanut butter for sunflower seed butter for a nut-free version.
