Ingredients
  

Main Recipe
  • 3 cups All-purpose flour Plus extra for dusting
  • 1 cup Warm water 110°F (43°C)
  • 2.25 tsp Active dry yeast 1 packet
  • 1 tsp Sugar To feed yeast
  • 1 tsp Salt
  • 1 cup Mozzarella cheese Shredded, low-moisture
  • 0.5 cup Tomato sauce Thick, pizza-style
  • 0.5 cup Pepperoni Diced into small chunks
  • 3 tbsp Salted butter Melted
  • 2 cloves Garlic Minced
  • 1 tsp Dried oregano Fine flakes
  • 0.5 tsp Coarse sea salt For finishing

Method
 

Dough Preparation
  1. Combine warm water, sugar, and yeast in a bowl. Let sit for 10 minutes until foamy.
  2. Mix in flour and salt. Knead for 5-7 minutes until smooth. Cover and let rise in a warm place for 90 minutes.
Assembly & Baking
  1. Divide dough into 6 balls. Roll each into a 6-inch circle on a floured surface.
  2. Add sauce, cheese, and pepperoni. Fold dough over and crimp edges with a fork to seal.
  3. Bake at 425°F (220°C) for 12-15 minutes until golden-brown with dark toasted spots.
  4. Brush with melted garlic butter, oregano, and coarse sea salt while hot.

Notes

Always use a thick pizza sauce to prevent the dough from getting soggy.
Poke a small vent hole in each pocket to prevent bursting in the oven.
