Prepare the Dough
- Combine warm milk, sugar, and yeast. Let sit until foamy (about 10 minutes).
- Combine flour, salt, yeast mixture, and egg in a stand mixer. Add butter 1 tbsp at a time while kneading on medium-low for 10 minutes.
- Place dough in a greased bowl, cover, and let rise in a warm spot until doubled (60-90 minutes).
Shape and Bake
- Divide into 8 pieces. Roll into 6-inch cylinders. Place on parchment-lined sheet.
- Cover and rise for 45 minutes. Brush with egg wash.
- Bake at 375°F (190°C) for 15-18 minutes until golden brown.
Assembly
- Toast buns. Grill franks to get char marks. Top with mustard zigzag, neon relish, and diced onions.
