  • 1 cup Carrots julienned matchsticks (approx. 100g)
  • 2 stalks Green Scallions sliced into rings
Creamy Dressing
  • 1/2 cup Mayonnaise 120ml, full fat recommended
  • 2 tablespoons Apple Cider Vinegar 30ml
  • 1.5 tablespoons Granulated Sugar 20g
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper freshly cracked

Equipment

  • 1 Large Mixing Bowl Light colored preferred for visual contrast
  • 1 Whisk
  • 1 Mandoline or Sharp Knife For thin shredding

Method
 

Prep Vegetables
  1. Thinly shred the green and purple cabbage using a knife or mandoline. Aim for 1/8 inch thickness.
  2. Peel and cut carrots into thin matchsticks. Combine with cabbage in a large bowl.
Create Dressing
  1. In a small bowl, whisk mayonnaise, vinegar, sugar, salt, and pepper until thick and glossy.
Assemble
  1. Pour dressing over vegetables and toss with tongs until evenly coated.
