  • 1/4 cup Unsweetened Cocoa Powder Dutch-processed (25g)
  • 3 tbsp Maple Syrup Or honey (45ml)
  • 1 tsp Vanilla Extract Pure extract (5ml)
  • 1/8 tsp Sea Salt A small pinch
  • 2 tbsp Dark Chocolate Chips For garnish (30g)

Preparation
  1. Combine cottage cheese, cocoa powder, maple syrup, vanilla, and salt in a high-speed blender. Process for 60-90 seconds until completely smooth and velvety.
  2. Pour the mixture into two small white ceramic bowls. Refrigerate for at least 2 hours to allow the mousse to set and develop air bubbles.
  3. Top with dark chocolate chips and serve with a silver spoon.

Notes

Use full-fat cottage cheese for the thickest texture.
Blend longer than you think to remove all curd graininess.
