  • 1 cup (185g) Long-Grain White Rice Uncooked
  • 1 cup (150g) Yellow Corn Vibrant and sweet
  • 1 can (425g) Black Beans Rinsed and drained
  • 1 cup (100g) Monterey Jack Cheese Shredded for melting
  • 2 tbsp (30ml) Taco Seasoning Chili powder, cumin, garlic, paprika
  • 1 tbsp (15ml) Avocado Oil For searing

Equipment

  • 1 Large Skillet For searing beef and vegetables.
  • 1 Rice Cooker or Pot To prepare the porous rice base.

Method
 

Preparation
  1. Rinse rice until water is clear. Cook with a pinch of salt until grains are porous and tender.
  2. Heat oil in skillet. Brown beef until a glossy oily sheen and fibrous meat texture forms. Add spices.
  3. Add corn and black beans to the pan, blistering the corn slightly for visual contrast.
  4. Top with cheese and cover for 60 seconds to create bubbling drips and messy overlapping layers.
  5. Layer rice, beef mixture, and garnish with fresh cilantro and lime juice droplets.

Notes
