  • 2 cups (480ml) Heavy Whipping Cream Very cold
  • 1/2 cup (60g) Powdered Sugar Sifted
  • 20 oz (567g) Crushed Pineapple Thoroughly drained
  • 4 cups (200g) Mini Marshmallows White
  • 1 cup (100g) Shredded Coconut Sweetened, divided
  • 1/4 cup Fresh Pineapple Tidbits For garnish
  • 1 sprig Fresh Mint For garnish

  • 1 Large Mixing Bowl Chilled for best results
  • 1 Hand mixer or stand mixer
  • 1 Silicone Spatula For gentle folding
  • 1 Small skillet For toasting coconut

Method
 

Preparation
  1. Place 1/2 cup of shredded coconut in a dry skillet over medium heat. Stir constantly until golden-brown (about 3-5 minutes). Remove immediately to a cool plate.
  2. In a large chilled bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form and it reaches a thick, airy texture.
  3. Gently fold in the drained crushed pineapple, mini marshmallows, and the remaining 1/2 cup of untoasted coconut using a silicone spatula.
  4. Transfer to a white ceramic bowl and refrigerate for 2 hours. Top with toasted coconut, fresh pineapple tidbits, and a sprig of mint before serving.

Notes

Ensure the pineapple is drained exceptionally well to prevent a watery fluff.
Use cold equipment for the thickest whipped cream peaks.
