  • 2 large Chicken Breasts Sliced horizontally
  • 4 Brioche Buns Toasted
  • 1/2 cup (120ml) Teriyaki Glaze Thick and glossy
  • 4 slices Fresh Pineapple Rings for grilling
  • 4 leaves Bibb Lettuce Fresh and ruffled
  • 1/2 Red Onion Thinly sliced
  • 1/4 cup (60ml) Mayonnaise Creamy
  • 1 cup (165g) Fresh Pineapple Finely diced
  • 1/4 cup (40g) Red Bell Pepper Finely diced
  • 2 tbsp Fresh Cilantro Chopped
  • 1/2 Lime Juiced

Equipment

  • 1 Outdoor Grill or Grill Pan For those perfect char marks.
  • 1 Mixing Bowl For the fresh salsa.

Method
 

Preparation
  1. In a small bowl, combine diced pineapple, red bell pepper, cilantro, and lime juice. Set aside in the fridge.
  2. Grill chicken for 5-6 minutes per side. Brush with glaze in the final 2 minutes until glossy and charred.
  3. Place pineapple rings on the grill for 2-3 minutes per side until caramelized.
  4. Spread mayo on the toasted bun. Layer lettuce, onion, chicken, grilled pineapple, and salsa.

Notes

Pound the chicken to an even thickness for uniform cooking.
Use fresh pineapple instead of canned for a firmer texture in the salsa.
