  • 17.3 oz Puff Pastry 490g, thawed but cold
  • 8 oz Deli Ham 225g, thin-sliced
  • 8 oz White Cheese 225g, Swiss or Gruyère, thick-sliced
  • 1 large Egg beaten with 1 tbsp water
  • 1 tbsp Poppy Seeds 9g, dried
  • 1 tsp Dried Parsley Flakes 0.5g

  • Parchment Paper
  • 1 Pastry Brush

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unfold the cold puff pastry and cut into 12 equal squares using a sharp knife.
Assembly
  1. Place a slice of white cheese on 6 of the squares, top with folded thin-sliced ham, and another small piece of cheese.
  2. Place the remaining 6 squares on top and press the edges gently to seal without flattening the center.
Finishing
  1. Brush the tops with egg wash. Sprinkle with poppy seeds and dried parsley flakes.
  2. Bake for 18-22 minutes until the pastry is puffed high with a dark gold finish and the cheese is bubbly.

Notes

Use a very sharp knife to avoid squishing the pastry layers.
Ensure the ham is thin-sliced so it can be folded for height.
