  • 1.5 lbs Ground Turkey 93% lean recommended (680g)
  • 3 Large Zucchini Sliced into 1/4 inch rounds (900g)
  • 1 tbsp Extra Virgin Olive Oil 15ml
  • 1 Medium Yellow Onion Finely diced (150g)
  • 4 Cloves Garlic Minced
  • 2 cups Marinara Sauce Low sugar (480ml)
  • 1.5 cups Mozzarella Cheese Shredded (170g)
  • 0.5 cup Parmesan Cheese Grated (50g)
  • 1 tsp Dried Oregano 1g

Equipment

  • 1 9x13 inch baking dish Ceramic or glass works best
  • 1 Large Skillet For browning the turkey
  • 1 Colander For draining zucchini moisture

Method
 

Preparation
  1. Slice zucchini into 1/4 inch rounds. Salt them in a colander for 15 minutes, then pat dry with paper towels to remove excess moisture.
  2. In a large skillet, heat olive oil. Add ground turkey and cook until browned and crumbled. Add onions and garlic, sautéing until fragrant.
Assembly & Baking
  1. Spread a layer of meat sauce in a 9x13 dish. Layer zucchini rounds, followed by more sauce. Repeat until all ingredients are used.
  2. Top with mozzarella and parmesan. Bake at 400°F (200°C) for 20 minutes. Broil for 2-3 minutes until cheese is blistered and bubbling.

Notes

Always salt your zucchini rounds to prevent a watery casserole.
Broil at the very end for that professional glossy, browned cheese finish.
