Preparation
- Slice zucchini into 1/4 inch rounds. Salt them in a colander for 15 minutes, then pat dry with paper towels to remove excess moisture.
- In a large skillet, heat olive oil. Add ground turkey and cook until browned and crumbled. Add onions and garlic, sautéing until fragrant.
Assembly & Baking
- Spread a layer of meat sauce in a 9x13 dish. Layer zucchini rounds, followed by more sauce. Repeat until all ingredients are used.
- Top with mozzarella and parmesan. Bake at 400°F (200°C) for 20 minutes. Broil for 2-3 minutes until cheese is blistered and bubbling.
