Ground Turkey Stir Fry with Garlic Broccoli and Glossy Soy Sauce

  • 1 lb Ground Turkey 93% lean recommended (454g)
  • 12 oz Broccoli Florets Fresh, cut into small pieces (340g)
  • 4 cloves Garlic Finely minced
  • 1/4 cup Soy Sauce Low sodium (60ml)
  • 1 tbsp Honey Or brown sugar (15ml)
  • 1 tsp Sesame Oil Toasted (5ml)
  • 1 tsp Cornstarch For the glossy finish (5g)
  • 1 tsp Red Chili Flakes Adjust to heat preference
  • 1 tbsp Sesame Seeds Toasted white seeds

  • 1 Large Skillet or Wok
  • 1 Small mixing bowl For whisking the sauce.

Method
 

Preparation
  1. In a small bowl, whisk together the soy sauce, honey, toasted sesame oil, and cornstarch until smooth. Set aside.
  2. Heat oil in a skillet over medium-high heat. Add the ground turkey, breaking it into large crumbles. Let sear undisturbed for 4 minutes to get browned edges, then finish cooking through.
  3. Remove turkey. Add broccoli to the skillet with 2 tbsp of water. Cover and steam for 90 seconds. Remove lid and sauté until vibrant green and crisp-tender.
  4. Add minced garlic and chili flakes to the pan. Sauté for 30 seconds. Return turkey to the pan and pour in the sauce. Stir for 1 minute until the sauce is thick and glossy.

Notes

Ensure the pan is very hot before adding the turkey to prevent it from boiling in its own juices.
Use fresh garlic rather than powder for the best visual 'bits' in the sauce.
