  • 1.5 lbs chicken breast cut into 1.5-inch cubes (680g)
  • 1 large red onion cut into thick wedges
  • 1 large red bell pepper cut into 1-inch chunks
  • 1 large green bell pepper cut into 1-inch chunks
  • 0.5 cup extra virgin olive oil divided (120ml)
  • 2 tbsp lemon juice plus 2 charred lemon halves for serving
  • 1 tbsp dried oregano plus extra for garnish
  • 4 cloves garlic minced
  • 0.25 cup fresh flat-leaf parsley finely chopped (15g)

  • 10 Wooden Skewers Soaked in water for 30 minutes
  • 1 Outdoor Grill or Grill Pan

Method
 

Preparation
  1. Whisk olive oil, lemon juice, garlic, oregano, and pepper. Toss chicken cubes in the mixture and refrigerate for 30-60 minutes.
  2. Thread soaked wooden skewers alternating between chicken, red onion wedges, and bell pepper chunks.
  3. Preheat grill to medium-high. Grill skewers for 3-4 minutes per side until chicken has distinct dark char marks and reaching 165°F (74°C).
  4. Brush with olive oil glaze, sprinkle with fresh parsley and extra oregano. Serve with charred lemon halves on a white platter.

Notes

Always soak wooden skewers to prevent burning.
For best char marks, do not move the chicken for the first 3 minutes of cooking.
