Greek Lamb Gyro Bowls with Creamy Tzatziki and Fluffy Rice

Ingredients
  

Lamb Base
  • 1 lb (454g) Ground Lamb 80/20 lean to fat ratio preferred
  • 1 tbsp (15ml) Olive Oil
  • 1 tsp (2g) Dried Oregano
The Rice
  • 1 cup (185g) Long-Grain White Rice Rinsed
  • 2 cups (480ml) Water
Assembly
  • 1 cup Cherry Tomatoes Halved
  • 1 large English Cucumber Diced
  • 1/4 cup Red Onion Thinly sliced
  • 1/2 cup (120ml) Tzatziki Sauce Creamy with dill
  • 1/4 cup (40g) Feta Cheese Crumbled

Equipment

  • 1 Cast Iron Skillet For the perfect sear on the lamb.
  • 1 Medium Saucepan For steaming the rice.

Method
 

Prepare the Grains
  1. Combine rinsed rice, water, and salt in a pot. Bring to a boil, cover, and simmer for 15 minutes. Let rest for 5 minutes before fluffing.
Cook the Protein
  1. Heat olive oil in a skillet. Add ground lamb and brown for 4 minutes undisturbed. Season with oregano, salt, and pepper, and cook until crispy.
Assembly
  1. Divide rice into 4 bowls. Top with lamb, cucumber, tomatoes, and onion in sections. Add a dollop of tzatziki in the center and garnish with feta.

Notes

For extra flavor, cook rice in chicken broth.
Soak onions in cold water to reduce their sharp bite.
