  • 1.5 lbs Chicken Thighs Boneless, skinless, cut into chunks
  • 1/4 cup Extra Virgin Olive Oil 60ml
  • 2 tbsp Lemon Juice 30ml
  • 1 tbsp Dried Oregano 5g
  • 1 cup Greek Yogurt 245g, full-fat
  • 1/2 large English Cucumber Grated and squeezed dry
  • 4 pieces Pita Bread Thick and porous

Equipment

  • 1 Cast Iron Skillet Used for achieving charred edges on the chicken.
  • 1 Box Grater For grating cucumber for tzatziki.

Method
 

Preparation
  1. Whisk olive oil, lemon juice, and spices. Toss with chicken chunks and marinate for 30 minutes.
  2. Combine strained cucumber, yogurt, garlic, and oil. Refrigerate until serving.
Cooking and Assembly
  1. Heat cast iron skillet to medium-high. Cook chicken undisturbed to develop charred edges and a glossy oily sheen.
  2. Warm pita until brown spots appear. Fold chicken, veggies, and tzatziki into a beautifully messy wrap.

Notes

Ensure cucumber is squeezed completely dry for thick sauce.
Use high heat for the chicken to get the rotisserie-style char.
