  • 1.5 lbs Pork Tenderloin cut into 1-inch cubes
  • 2 tbsp Neutral Oil Avocado or vegetable oil
  • 0.5 tsp Sea Salt
  • 3 tbsp Lime Juice freshly squeezed
  • 2 tbsp Honey or agave nectar
  • 1 tbsp Fresh Ginger finely grated
  • 1 tbsp Soy Sauce light or low sodium
  • 1.5 cups Jasmine Rice rinsed
  • 1 can Full-Fat Coconut Milk 400ml
  • 0.5 cup Water 120ml
  • 1/4 cup Fresh Cilantro leaves for garnish
  • 1 whole Red Chili thinly sliced
  • 1 whole Lime cut into wedges and zested

Equipment

  • 1 Large Skillet Preferably cast iron or heavy-bottomed for searing.
  • 1 Medium Pot For cooking the coconut rice.

Method
 

Preparation
  1. Combine rinsed jasmine rice, coconut milk, and water in a pot. Bring to a boil, then simmer covered for 15 minutes. Let rest for 5 minutes before fluffing with a fork.
  2. Pat pork cubes dry and season with salt. Heat oil in a skillet over medium-high. Sear pork in batches for 2-3 minutes per side until golden brown with visible charred edges.
  3. Whisk lime juice, honey, ginger, and soy sauce. Pour into the skillet with the pork. Stir for 1-2 minutes until the sauce reduces into a glossy amber glaze.
  4. Serve the pork over the fluffy coconut rice. Garnish with cilantro, sliced red chilies, lime zest, and a lime wedge.

Notes

For a glossy finish, ensure the honey and lime juice reduce enough to coat the spoon.
Always use fresh ginger for the best aromatic heat.
