  • 1.5 lbs Baby Potatoes 680g, Yukon Gold or Yellow preferred
  • 3 tbsp Unsalted Butter 45ml, melted
  • 2 tbsp Extra Virgin Olive Oil 30ml
  • 5 cloves Garlic minced finely
  • 1/2 cup Parmesan Cheese 50g, finely grated
  • 1 tsp Kosher Salt plus more for boiling water
  • 2 tbsp Fresh Parsley 8g, chopped

Method
 

Preparation
  1. Place potatoes in a pot of cold salted water. Bring to a boil and cook for 15-20 minutes until fork-tender. Drain and let steam dry for 2 minutes.
  2. Preheat oven to 425°F (220°C). Place potatoes on a baking sheet and smash to 1/2 inch thickness using a flat-bottomed glass.
  3. Whisk melted butter, oil, and minced garlic. Brush over potatoes. Roast for 20 minutes. Top with parmesan and roast 5-10 more minutes until golden-brown.
  4. Scatter fresh chopped parsley over the hot potatoes and serve immediately.

Notes

Ensure the potatoes are dry before smashing for maximum crispiness.
Use high-quality block parmesan for the best toasted crust results.
