Ingredients

Recipe Ingredients
  • 1 lb Potato Gnocchi 450g, shelf-stable or refrigerated
  • 4 tbsp Unsalted Butter 56g, divided
  • 1 tbsp Extra Virgin Olive Oil 15ml
  • 4 cloves Garlic 20g, finely minced
  • 1/2 cup Parmesan Cheese 45g, finely grated
  • 1 tsp Dried Parsley Flakes 1g

Equipment

  • 1 Cast Iron Skillet Large 12-inch preferred
  • 1 Microplane or Fine Grater For the parmesan

Method

Cooking Process
  1. Heat olive oil and 1 tbsp butter in a cast-iron skillet over medium-high heat. Add gnocchi in a single layer and fry undisturbed for 3-4 minutes until a golden-brown charred crust forms.
  2. Add the remaining 3 tbsp butter and minced garlic to the pan. Toss the gnocchi to coat. Sauté for 2-3 minutes until the gnocchi is crispy on all sides and the garlic is fragrant.
  3. Remove from heat. Top with a thick layer of finely grated parmesan cheese and a heavy sprinkle of dried parsley flakes. Serve immediately in the skillet.

Notes

Do not boil the gnocchi beforehand; frying them dry ensures the best crunch.
If the garlic begins to brown too quickly, lower the heat immediately to avoid bitterness.
