Preparation
- In a small bowl, mix softened butter, minced garlic, and dried parsley until smooth.
- Spread the garlic butter on one side of each bread slice. Flip over and layer mozzarella and cheddar on the unbuttered side. Close the sandwich.
- Place in a skillet over medium-low heat. Cover and cook for 3 minutes until golden-brown and cheese is melted. Flip and toast the other side for 2 minutes.

Use a lid while cooking to ensure the cheese melts perfectly before the bread burns.
