  • 1 cup Granulated Sugar 200g
  • 3 large Eggs Room temperature
  • 1 1/2 cups All-Purpose Flour 188g
  • 1 1/2 tsp Baking Powder
  • 1/4 cup Whole Milk 60ml
  • 1 tsp Vanilla Extract
  • 3-4 large Fresh Yellow Peaches Sliced into wedges
  • 1 tbsp Powdered Sugar For dusting

Preparation
  1. In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer for 3-5 minutes until very pale and fluffy.
  2. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Assembly and Baking
  1. Whisk flour and baking powder together. Gradually add to the wet ingredients, alternating with milk, mixing until just combined.
  2. Pour batter into the greased ceramic dish. Arrange peach slices in a dense, overlapping circular pattern on top.
  3. Bake at 350°F (175°C) for 45 minutes or until the cake is golden-brown and a toothpick comes out clean.
  4. Allow to cool slightly, then apply a light dusting of powdered sugar over the caramelized peaches.
