Ingredients
  

The Fried Chicken
  • 2 large chicken thighs boneless, skinless
  • 1 cup (240ml) buttermilk for brining
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (60g) cornstarch for extra crunch
The Brioche French Toast
  • 4 slices brioche bread 1.5 inches thick
  • 3 large eggs
  • 1/2 cup (120ml) heavy cream
Toppings
  • 1/2 cup (120ml) amber maple syrup thick and translucent
  • 2 tbsp powdered sugar
  • 1 tsp dried herb flakes parsley and chives

Equipment

  • 1 Deep Fryer or Heavy Pot For frying chicken
  • 1 Non-stick Skillet For French toast
  • 1 Wire Cooling Rack To keep chicken crispy

Method
 

Prepare the Chicken
  1. Marinate chicken in buttermilk for 30 minutes.
  2. Coat chicken in flour, cornstarch, and spices. Add a few drops of buttermilk to the flour for craggy bits.
  3. Deep fry at 350°F (175°C) until golden brown and internal temp is 165°F (74°C).
Prepare the French Toast
  1. Dip brioche into the egg and cream mixture for 15 seconds per side.
  2. Cook in a buttered skillet until golden with caramelized edges.
Assembly
  1. Stack the chicken between two slices of French toast. Drizzle with syrup, dust with sugar, and sprinkle herbs.

Notes

Use a wire rack to prevent chicken from getting soggy.
Ensure the oil returns to 350°F before adding the second batch of chicken.
