Dill Pickle Chicken Skewers (Air Fried & Extra Crispy)

These Dill Pickle Chicken Skewers feature pickle-brined chicken cubes air-fried to golden-brown perfection. Served with a thick dill ranch drizzle and crinkle-cut pickles, they are the ultimate tangy, high-protein snack or easy weeknight dinner.

Ingredients
  

Main Ingredients
  • 1.5 lbs chicken breast or thighs cut into 1-inch cubes
  • 1 cup dill pickle juice from the jar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 1 cup crinkle-cut dill pickle rounds
  • 1/2 cup thick creamy dill ranch dressing
  • 1 tbsp fresh dill sprigs for garnish
  • 1 tsp dried dill weed

  • 8 Wooden Skewers Soaked in water

Method
 

Preparation
  1. Combine chicken cubes, pickle juice, garlic powder, onion powder, and dried dill in a bowl. Marinate for 30-60 minutes.
  2. Thread chicken cubes and crinkle-cut pickles onto soaked wooden skewers, alternating every two pieces of chicken with a pickle slice.
Cooking
  1. Preheat air fryer to 400°F (200°C). Lightly oil skewers and air fry for 10-12 minutes, flipping halfway, until golden-brown and charred.
  2. Drizzle with thick dill ranch dressing and top with fresh dill sprigs and cracked black pepper before serving.

Notes

Don't marinate the chicken for more than 4 hours or it will become mushy.
Use cold refrigerated pickles for the best crunch.
