Crockpot Ground Beef and Potato: The Ultimate Comfort Meal

Ingredients
  

  • 2 lbs lean ground beef 85/15 or 90/10 recommended
  • 1 large yellow onion chopped
  • 3 cloves garlic minced
  • 2.5 lbs Yukon Gold potatoes peeled and cubed into 1-inch pieces
  • 2 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes undrained
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground

Equipment

  • 1 Slow Cooker (Crockpot) A 6-quart slow cooker is recommended.
  • 1 Skillet For browning the ground beef.

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef and chopped onion until the beef is browned. Drain any excess grease. Add the minced garlic and cook for 1 minute more until fragrant.
  2. Place the cubed potatoes in the bottom of a 6-quart slow cooker. Top with the cooked ground beef mixture.
  3. In a mixing bowl, whisk together the beef broth, undrained diced tomatoes, Worcestershire sauce, dried thyme, paprika, salt, and black pepper.
  4. Pour the sauce over the beef and potatoes in the slow cooker. Stir gently to combine everything.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the potatoes are tender.
  6. Stir before serving. Garnish with fresh parsley if desired.

Notes

Tip 1: For a thicker sauce, mix 2 tbsp of cornstarch with 3 tbsp of cold water to make a slurry. Stir it into the crockpot during the last 30 minutes of cooking on HIGH.
Tip 2: Don't skip browning the beef! This step adds a significant amount of flavor to the final dish.
