The Base
  • 4 pieces Chicken Breasts Boneless and skinless
  • 1 cup (125g) All-Purpose Flour Seasoned with salt and pepper
  • 2 large Eggs Beaten
  • 2 cups (120g) Panko Breadcrumbs For maximum crunch
  • 1/2 cup (120ml) Neutral Oil For frying
The Toppings
  • 4 slices Deli Ham Thinly sliced
  • 4 slices Swiss Cheese Thick cut
  • 1 teaspoon Dried Parsley Flakes For garnish
Honey Mustard Sauce
  • 1/4 cup (60ml) Yellow Mustard
  • 2 tablespoons Honey

Equipment

  • 1 Large Skillet For frying the chicken.
  • 1 Meat Mallet To pound chicken to even thickness.
  • 1 Baking Sheet For melting the cheese under the broiler.

Method
 

Prepare the Chicken
  1. Place chicken breasts between plastic wrap and pound to 1/2 inch (1.25cm) thickness using a meat mallet.
  2. Dredge each breast in flour, dip into beaten eggs, then press firmly into the panko breadcrumbs until fully coated.
Cook and Melt
  1. Heat oil in a skillet over medium-high heat. Fry chicken for 4-5 minutes per side until golden-brown and crispy.
  2. Place chicken on a baking sheet. Top each with a slice of ham and Swiss cheese. Broil for 1-2 minutes until cheese is glossy with golden spots.
  3. Sprinkle with parsley and serve immediately with honey mustard sauce on the side.

Notes

Ensure the oil is hot (350°F) before adding chicken to prevent greasiness.
Use high-quality Swiss cheese for the best melting properties.
