Ingredients
  

Crispy Cajun Chicken
  • 1 lb chicken breast or thighs Cut into bite-sized chunks (450g)
  • 3 tbsp Cajun seasoning rub Smoky and dark red
  • 1/4 cup all-purpose flour 30g
  • 1/4 cup cornstarch 30g
  • 3 tbsp vegetable oil 45ml
Rice Base
  • 1.5 cups jasmine rice 300g, dry
  • 2.25 cups water 540ml
Sauce & Garnish
  • 1/2 cup mayonnaise 120ml
  • 1 tbsp Sriracha Adjust for heat
  • 2 stalks green onions Finely sliced
  • 1 tsp dried herb flakes Parsley or oregano

Equipment

  • 1 Large Skillet Heavy-bottomed preferred for even searing.
  • 1 Squeeze Bottle For the spicy mayo zigzag.

Method
 

Cook the Jasmine Rice
  1. Rinse rice until water is clear. Combine with water in a pot, bring to a boil, then cover and simmer for 15 minutes.
Prepare the Cajun Chicken
  1. Toss chicken pieces with Cajun rub. Dredge in the flour and cornstarch mixture until fully coated.
  2. Heat oil in skillet. Fry chicken in batches for 3-4 minutes per side until golden-brown with charred edges.
Assemble the Bowls
  1. Layer rice in bowls, top with chicken. Drizzle spicy mayo in a zigzag and top with green onions and dried herbs.

Notes

Ensure the oil is hot before adding chicken to prevent sogginess.
Use a squeeze bottle for the mayo to achieve the Pinterest-perfect look.
