  • 1/4 cup Roasted Red Peppers Diced (60g)
  • 3 tbsp Extra Virgin Olive Oil High quality for drizzling (45ml)
  • 2 tbsp Fresh Parsley Finely chopped
  • 1 tsp Lemon Zest From one organic lemon
  • 1/2 tsp Black Pepper Coarsely cracked

Method
 

Whipped Base Preparation
  1. In a food processor, combine the room-temperature feta cheese and cream cheese. Process on high for 2-3 minutes until the mixture is pale-ivory, light, and completely smooth without any large feta clumps.
  2. Add the lemon juice and pulse a few times to incorporate. Scrape down the sides of the bowl to ensure every bit is whipped.
Assembly and Topping
  1. Spread the whipped feta mixture into a textured white ceramic bowl. Use a spoon to create deep swirls and a central well for the oil.
  2. Pour the extra virgin olive oil into the center well. Top with sliced green olives, diced roasted red peppers, fresh parsley, lemon zest, and cracked black pepper, ensuring the toppings are submerged in or resting on the oil.

Notes

Always use block feta rather than crumbles for the smoothest possible texture.
Ensure the cream cheese is fully softened to avoid a lumpy dip.
