Ingredients

Main Ingredients
  • 1 lb (450g) Jumbo Shrimp Peeled and deveined, tails on
  • 1 cup (240ml) Full-Fat Coconut Milk Canned for maximum creaminess
  • 4 cloves Garlic Minced finely
  • 2 tbsp (30ml) Olive Oil For searing
  • 1/4 cup Fresh Cilantro Chopped finely

Equipment

  • 1 Large Skillet Non-stick or cast iron preferred for searing.
  • 1 Silver Spoon For basting and serving.

Method

Preparation
  1. Heat oil in a skillet over medium-high heat. Add shrimp and sear for 1-2 minutes until golden edges appear. Remove and set aside.
  2. Lower heat to medium, add garlic and sauté for 30 seconds. Pour in coconut milk and simmer for 5 minutes until it reaches a glossy, silken consistency.
  3. Toss shrimp back into the sauce, sprinkle with cilantro, and serve immediately with a spoon for the messy-chic look.

Notes

Ensure shrimp are bone-dry before searing to get that golden crust.
Use full-fat coconut milk for the most luxurious mouthfeel.
