  • 2 cups Shredded Chicken Breast 300g, cooked and moist
  • 1 cup Sweet Green Peas 150g, thawed if frozen
  • 1/2 cup Celery 60g, crisp green chopped
  • 1/4 cup Red Onion 40g, finely diced
  • 1.5 cups Creamy White Dressing 350ml, Mayo or Greek Yogurt based
  • 1 tsp Dried Parsley Flakes For garnish
  • 1/2 tsp Ground Black Pepper For garnish

Equipment

  • 1 Large pot For boiling pasta
  • 1 Large Mixing Bowl A white ceramic bowl is recommended for presentation

Method

Preparation
  1. Boil rotini in salted water until al dente. Drain and rinse with cold water immediately to stop cooking.
  2. Shred the chicken breast into moist chunks. Dice the red onion and celery finely. Thaw the peas if needed.
  3. In a small bowl, whisk the creamy dressing until smooth and velvety.
  4. Combine pasta, chicken, peas, onion, and celery in a white bowl. Pour dressing over and toss until thoroughly coated.
  5. Finish with a generous dusting of dried parsley flakes and ground black pepper before serving.

Notes

Rinse your pasta under cold water to keep the spirals distinct.
Add a splash of milk if the dressing becomes too thick after chilling.
