Main Ingredients
  • 2 large Chicken Breasts approx 500g, sliced into strips
  • 1.5 tbsp Cajun Seasoning divided
  • 2 tbsp Vegetable Oil for searing
  • 1 cup Jasmine Rice 185g
  • 2 tbsp Butter 30g
  • 3 cloves Garlic minced
  • 1 cup Heavy Cream 240ml
  • 1/2 cup Chicken Broth 120ml
  • 1 tsp Red Pepper Flakes plus extra for garnish
  • 1/4 cup Fresh Parsley finely chopped

Equipment

  • 1 Heavy Skillet Cast iron preferred for better char.
  • 1 Saucepan For the garlic rice.

Method
 

Make the Rice
  1. Melt butter in a saucepan and sauté minced garlic for 1 minute.
  2. Add rice, toast for 2 minutes, then add 2 cups water. Simmer covered for 15 minutes.
Prepare Chicken and Sauce
  1. Season chicken strips and sear in a hot skillet for 4-5 minutes per side until charred and cooked through.
  2. Deglaze pan with broth, add cream and spices. Simmer until thickened and pale-orange.
  3. Serve chicken over rice, drench in sauce, and garnish with parsley and red pepper flakes.

Notes

Use a meat thermometer to ensure chicken reaches 165°F.
Rinse rice thoroughly for the fluffiest texture.
