Cowboy Stir Fry with Crispy Potatoes and Smoked Sausage

This Cowboy Stir Fry features smoky seared kielbasa rounds and ultra-crispy skin-on yellow potatoes. A 30-minute cast iron skillet meal packed with charred peppers, onions, and aromatic oregano.

Cowboy Stir Fry Ingredients
  • 1 lb (450g) Smoked Sausage (Kielbasa) cut into 1/2-inch rounds
  • 1.5 lbs (680g) Yellow Potatoes skin-on, cubed into 1/2-inch pieces
  • 1 large Red Bell Pepper sliced into strips
  • 1 large Green Bell Pepper sliced into strips
  • 1 medium Yellow Onion sliced into strips
  • 3 tbsp (45ml) Avocado Oil divided
  • 1 tsp (2g) Dried Oregano Flakes
  • 1/2 tsp (1g) Cracked Black Pepper
  • to taste Sea Salt visible crystals preferred

  • 1 12-inch Cast-Iron Skillet Essential for the best sear.
  • 1 Chef's Knife

Method
 

Preparation
  1. Heat 1 tbsp oil in a cast iron skillet. Brown sausage rounds for 3-4 minutes per side until caramelized. Remove and set aside.
  2. Add remaining oil and potatoes. Cook undisturbed for 5 minutes, then stir occasionally for 10-12 minutes until golden and crispy.
  3. Add peppers and onions to the pan. Cook for 5-7 minutes until softened and edges are charred.
  4. Return sausage to the pan. Season with oregano, cracked pepper, and salt. Toss for 2 minutes and serve.

Notes

Use a high smoke point oil to avoid bitter flavors.
Ensure potatoes are dry before adding to the pan for maximum crunch.
