Ingredients
  

The Dip Base
  • 1 can (15 oz) Black-eyed peas rinsed and drained
  • 1 can (15 oz) Black beans rinsed and drained
  • 1.5 cups Yellow corn canned, frozen, or fresh
  • 1 large Red bell pepper finely diced
  • 1/2 medium Red onion finely diced
  • 2 large Avocados diced into chunks
  • 1/2 cup Fresh cilantro chopped
Zesty Lime Dressing
  • 1/3 cup Olive oil
  • 1/4 cup Fresh lime juice about 2 limes
  • 1 tbsp Honey or agave for vegan
  • 1 tsp Ground cumin
  • 1/2 tsp Chili powder

Equipment

  • 1 Large Mixing Bowl
  • 1 Small Jar or Whisk For the dressing
  • 1 Chef's Knife For precision dicing

Method
 

Prepare the Ingredients
  1. Drain and rinse the black-eyed peas, black beans, and corn. Ensure they are well-drained to prevent a watery dip.
  2. Finely dice the red bell pepper, red onion, and jalapeƱos. Aim for a uniform size for the best mouthfeel.
Assemble the Dip
  1. Whisk together olive oil, lime juice, honey, cumin, and chili powder in a small bowl until emulsified.
  2. Mix the beans, corn, and peppers in a large bowl. Pour the dressing over and toss. Let it chill in the fridge for 30-60 minutes.
  3. Just before serving, gently fold in the avocado chunks and fresh cilantro to maintain their vibrant color and texture.

Notes

Wait to add the avocado until serving to prevent browning.
