Method
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a food processor or high-speed blender, combine the cottage cheese and egg. Blend until completely smooth. Add the all-purpose flour, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Pulse until just combined.
- Spoon the batter onto the center of the prepared parchment paper and spread into a 10-12 inch circle. Bake for 15-20 minutes, until the surface is dry and the edges are golden-brown.
- Remove the crust from the oven. Spread the pizza sauce over the crust, then sprinkle with shredded mozzarella cheese.
- Return the pizza to the oven and bake for an additional 8-10 minutes, until the cheese is bubbly and melted.
- Let the pizza cool for a few minutes, then top with fresh basil leaves and a sprinkle of red pepper flakes before slicing and serving.
Notes
Don't Use Low-Fat Cottage Cheese: Full-fat is essential for the best flavor and a tender texture.
The Pre-Bake is Non-Negotiable: This is the secret to a crispy crust.
Spread it Thin: A thinner crust will be crispier.
Rest Before Slicing: Letting the pizza rest for 3-5 minutes allows the crust to set up.
