  • 1 cup (225g) Full-Fat Cottage Cheese
  • 1 large Egg
  • 1/4 cup (30g) All-Purpose Flour
  • 1/4 cup (25g) Grated Parmesan Cheese
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 cup (120ml) Pizza Sauce
  • 1 cup (112g) Shredded Low-Moisture Mozzarella
  • 1 handful Fresh Basil Leaves for garnish
  • 1 pinch Red Pepper Flakes for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a food processor or high-speed blender, combine the cottage cheese and egg. Blend until completely smooth. Add the all-purpose flour, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Pulse until just combined.
  3. Spoon the batter onto the center of the prepared parchment paper and spread into a 10-12 inch circle. Bake for 15-20 minutes, until the surface is dry and the edges are golden-brown.
  4. Remove the crust from the oven. Spread the pizza sauce over the crust, then sprinkle with shredded mozzarella cheese.
  5. Return the pizza to the oven and bake for an additional 8-10 minutes, until the cheese is bubbly and melted.
  6. Let the pizza cool for a few minutes, then top with fresh basil leaves and a sprinkle of red pepper flakes before slicing and serving.
