Ingredients
  

Main Ingredients
  • 1.5 cups (300g) Long-grain white rice Jasmine or Basmati
  • 1 can (400ml) Full-fat coconut milk Shake before opening
  • 1 cup (240ml) Filtered water or vegetable broth
  • 1 tsp (5g) Kosher salt
  • 2 cups (330g) Fresh pineapple chunks Cut into 1-inch pieces
  • 1 tbsp (15ml) Coconut oil
  • 1/2 cup (15g) Fresh cilantro and green onions Finely chopped

Equipment

  • 1 Large Non-Stick Skillet or Pot Heavy-bottomed preferred
  • 1 Fine-mesh Sieve For rinsing rice

Method
 

Prep and Sear
  1. Heat coconut oil in a pot over medium-high heat. Add pineapple chunks and sear for 3-4 minutes until edges are golden and caramelized. Remove half and set aside.
  2. Add rinsed rice to the pot with the remaining pineapple. Stir for 1-2 minutes until slightly toasted.
Cook and Fluff
  1. Add coconut milk, broth, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
  2. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and fold in the reserved pineapple and fresh herbs.

Notes

Rinse rice thoroughly to prevent stickiness.
Use full-fat coconut milk for the signature glistening texture.
