  • 3 lb boneless pork loin 1.36kg
  • 12 oz Coca-Cola 355ml, not diet
  • 1/2 cup brown sugar 100g, packed
  • 1/4 cup soy sauce 60ml
  • 2 tbsp Dijon mustard 30ml
  • 4 cloves garlic minced
  • 1/4 cup fresh parsley 15g, finely chopped
  • 5 sprigs fresh rosemary whole sprigs

  • 1 Meat Thermometer

Method
 

Preparation and Searing
  1. Heat oil in an oven-safe skillet. Sear the pork loin on all sides until small blackened charred bits form on the edges.
  2. Remove pork. Add Coca-Cola, brown sugar, soy sauce, and mustard to the skillet. Boil for 5-7 minutes until a thick mahogany syrup forms.
Roasting and Finishing
  1. Return pork to the skillet. Roast at 375°F (190°C) for 35-45 minutes, basting every 15 minutes for a sticky caramelization.
  2. Rest the meat on a wooden board for 15 minutes. Garnish with chopped parsley and rosemary sprigs before slicing into thick rounds.

Notes

Always use full-sugar Coca-Cola for the proper glaze consistency.
Internal temperature must reach 145°F (63°C) for food safety and juiciness.
