Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan thoroughly or line with parchment paper for easy removal.
- In a large bowl, mash the bananas until smooth. Whisk in the melted butter, granulated sugar, egg, vanilla, and Greek yogurt until fully combined.
- Sift the flour, baking soda, and salt into the wet mixture. Fold gently with a spatula until no dry streaks remain. Do not over-mix.
- In a small bowl, stir together the brown sugar, cinnamon, and 1 tablespoon of melted butter until it forms a thick paste.
- Pour half of the banana batter into the pan. Dollop 2/3 of the cinnamon mixture on top. Add the remaining batter, then the rest of the cinnamon. Use a knife to swirl gently.
- Bake for 50-60 minutes until the crust is golden-brown and a toothpick comes out clean. Cool completely in the pan.
- Whisk powdered sugar and cream until thick and opaque. Drizzle over the cooled loaf and let it set before slicing.

Use very spotty bananas for the best moisture and sweetness.
