  • 1.5 cups (250g) cooked chickpeas rinsed and drained
  • 1 can (15 oz / 425g) black beans rinsed and drained
  • 0.5 cup (75g) red onion finely diced
  • 0.5 cup (75g) feta cheese large irregular crumbles
  • 0.25 cup (15g) fresh cilantro coarsely chopped
  • 3 tablespoons (45ml) extra virgin olive oil
  • 2 tablespoons (30ml) fresh lime juice about 1 large lime
  • 0.5 teaspoon salt and pepper to taste

Method
 

Preparation
  1. Drain and rinse the chickpeas and black beans under cold water. Pat dry to ensure the dressing adheres properly.
  2. Finely dice the red onion and coarsely chop the fresh cilantro.
  3. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper until the vinaigrette is glistening and combined.
  4. In a large ceramic bowl, combine the beans, onions, and feta. Pour over the dressing and toss gently. Top with a heavy scattering of cilantro before serving.

Notes

For a milder onion flavor, soak diced red onions in ice water for 5 minutes before adding to the salad.
Add a diced avocado just before serving for extra creaminess.
