  • 12 Corn Tortillas Yellow or white
  • 3 cups (450g) Shredded Chicken Poached or rotisserie
  • 2 cups (480ml) Mole Sauce Thick, dark mahogany-brown
  • 2 tbsp (30ml) Neutral Oil For softening tortillas
  • 1/2 cup (60g) Queso Fresco Finely crumbled
  • 1 small White Onion Sliced into thin, translucent rings
  • 1/4 cup (10g) Fresh Cilantro Sprigs
  • 1 tbsp (9g) Toasted White Sesame Seeds

Equipment

  • 1 Small skillet For softening tortillas
  • 1 Tongs To handle tortillas
  • 1 Mixing Bowl For chicken filling

Method
 

Preparation
  1. Combine shredded chicken with 1/4 cup of mole sauce in a bowl until evenly coated.
  2. Heat oil in a skillet. Flash-fry each tortilla for 5-8 seconds per side until pliable. Dip briefly into warm mole sauce.
  3. Place chicken filling in tortillas, roll tightly, and place seam-side down on a plate (3 per serving).
  4. Drape remaining warm mole sauce over the top. Garnish heavily with queso fresco, onion rings, cilantro, and toasted sesame seeds.

Notes

Always dip the tortillas in oil first to prevent them from getting mushy.
Use a matte white plate to make the dark mahogany sauce pop visually.
