Ingredients
  

Chicken & Marinade
  • 1.5 lbs Chicken Thighs 680g, cut into strips
  • 1/4 cup Extra Virgin Olive Oil 60ml
  • 2 tbsp Lemon Juice 30ml, freshly squeezed
  • 4 cloves Garlic minced
  • 1 tbsp Dried Oregano 5g
Golden Rice
  • 1 cup Basmati Rice 185g
  • 1/2 tsp Turmeric 1g
  • 1.75 cups Water 415ml
Tzatziki Sauce
  • 1 cup Greek Yogurt 245g, plain and full fat
  • 1/2 cup Cucumber 60g, grated and squeezed
  • 1 tbsp Fresh Dill chopped

Equipment

  • 1 Cast Iron Skillet
  • 1 Medium Saucepan For the golden rice

Method
 

Preparation
  1. Combine olive oil, lemon juice, garlic, and oregano. Add chicken strips and marinate for 30 minutes.
  2. Cook rice with water and turmeric until fluffy and golden.
Cooking & Assembly
  1. Sear cherry tomatoes in a hot skillet until the skins blister.
  2. Sauté chicken in a cast iron skillet until charred and glossy.
  3. Layer rice, vegetables, chicken, and a dollop of tzatziki in bowls.

Notes

Use a heavy skillet to ensure a good char on the chicken.
Ensure cucumber is fully squeezed dry for a thick tzatziki.
