  • 7 oz Ladyfingers (Savoiardi) Dry and crisp
  • 1.5 cups Strong Espresso 350ml, room temperature
  • 3 tbsp Amaretto Liqueur 45ml, for coffee soak
  • 16 oz Mascarpone Cheese 450g, room temperature
  • 1 cup Heavy Whipping Cream 240ml, cold
  • 0.5 cup Granulated Sugar 100g
  • 5 tbsp Amaretto Liqueur 75ml, divided for cream and compote
  • 2 cups Cherries 300g, pitted fresh or frozen
  • 2 tbsp Cocoa Powder For dusting

Method
 

Prepare the Components
  1. Simmer cherries, 2 tbsp sugar, and 2 tbsp water in a saucepan for 10-12 minutes until thickened. Stir in 1 tbsp Amaretto and cool.
  2. Combine brewed espresso and 3 tbsp Amaretto in a shallow bowl. Let cool.
Assembly
  1. Beat mascarpone, remaining sugar, and 4 tbsp Amaretto. Fold in stiffly whipped heavy cream.
  2. Dip ladyfingers in coffee for 1 second per side. Layer in bowls, followed by mascarpone cream, cherry compote, and more cream.
  3. Dust with cocoa powder and garnish with fresh cherries with stems. Chill for at least 4 hours.

Notes

Avoid over-soaking the ladyfingers to prevent sogginess.
Use high-quality Dutch-processed cocoa for the best flavor profile.
