Ingredients
  

Main Ingredients
  • 4 cups shredded zucchini approx. 500g, moisture squeezed out
  • 2 large eggs beaten
  • 1/2 cup Parmesan cheese 50g, freshly grated
  • 1/2 tsp garlic powder
  • 2 cups shredded mozzarella cheese 225g, low-moisture
  • 1 tsp dried oregano dried flakes
  • 1/2 tsp cracked black pepper

Equipment

  • 1 Box Grater For shredding zucchini
  • 1 Kitchen Towel To squeeze out moisture
  • 1 Baking Sheet Lined with parchment paper

Method
 

Prepare the Zucchini
  1. Shred the zucchini using a box grater. Wrap in a clean kitchen towel and squeeze firmly to remove as much liquid as possible.
Bake the Crust
  1. In a bowl, mix squeezed zucchini, eggs, parmesan, and garlic powder. Press into a 1/4 inch thick rectangle on a parchment-lined baking sheet.
  2. Bake at 425°F (220°C) for 15-20 minutes until the edges are caramelized and the base is firm.
Add Toppings
  1. Top with mozzarella cheese. Bake for another 5-8 minutes. Broil for 1 minute for toasted golden spots.
  2. Sprinkle with oregano and black pepper. Let cool for 5 minutes before slicing into rectangular strips.

Notes

Always use parchment paper to prevent sticking.
Squeeze the zucchini until it feels completely dry for the best crust texture.
