  • 1 lb Chicken Breasts Sliced into cutlets
  • 2 cups Buttermilk 480ml
  • 3 tbsp Cajun Seasoning Divided
  • 1.5 cups All-Purpose Flour 190g
  • 0.5 cup Cornstarch 60g
  • 0.5 cup Mayonnaise 120ml
  • 4 cloves Garlic Minced
  • 4 Brioche Buns Buttery and toasted
  • 1 head Ruffled Lettuce Fresh and crisp

Equipment

  • 1 Heavy-bottomed skillet or Dutch oven For frying
  • 1 Wire Cooling Rack To keep chicken crispy
  • 1 Meat Thermometer To ensure 165°F internal temp

Method
 

Preparation
  1. Submerge chicken cutlets in buttermilk and 1 tbsp Cajun seasoning. Refrigerate for at least 30 minutes.
  2. Mix flour, cornstarch, and remaining seasoning. Add a splash of buttermilk to create small clumps for extra crunch.
Cooking
  1. Press chicken into flour mixture firmly. Let rest on a wire rack for 10 minutes to set the breading.
  2. Fry in 350°F (175°C) oil for 4-5 minutes per side until golden-reddish brown and 165°F internally.
Assembly
  1. Whisk mayonnaise, garlic, and lemon juice until creamy white.
  2. Spread aioli on toasted buns, add ruffled lettuce, and top with the crispy Cajun chicken.

Notes

Use a wire rack to rest fried chicken instead of paper towels.
Add cornstarch to your flour for a shatteringly crisp exterior.
