  • 12 oz Linguine Noodles 340g
  • 1 lb Chicken Breast 450g, sliced into strips
  • 2 tbsp Cajun Seasoning Red spice seasoning
  • 1.5 cups Heavy Cream 360ml
  • 1 cup Mozzarella Cheese 113g, freshly shredded
  • 2 cloves Garlic minced
  • 1 tbsp Butter 14g

  • 1 Large Skillet Cast iron preferred for better searing.
  • 1 Pasta Pot

Method
 

Preparation
  1. Boil linguine in salted water until al dente. Reserve 1/2 cup of pasta water.
  2. Coat chicken strips heavily in Cajun spice and olive oil until dark crimson.
  3. Sear chicken in a hot skillet until blackened edges appear. Remove and set aside.
  4. Sauté garlic in butter, add cream, and whisk in mozzarella until an opaque, ivory sauce forms.
  5. Toss linguine in the sauce, top with chicken, parsley, and black pepper.

Notes

Use a heavy hand with the Cajun seasoning for the best color contrast.
Always freshly grate your mozzarella for the smoothest cream sauce.
