  • 3 lbs Chicken wings split into flats and drumettes
  • 1 cup Pineapple juice 240ml
  • 3/4 cup Light brown sugar 150g
  • 1/4 cup Soy sauce 60ml
  • 1 tbsp Fresh ginger grated
  • 1 tbsp Garlic minced
  • 1 tsp Dried red chili flakes
  • 1 tbsp Cornstarch mixed with 1 tbsp water
  • 2 stalks Green onions finely sliced
  • 1 tbsp White sesame seeds toasted

  • 1 Baking sheet with wire rack
  • 1 Small saucepan

Method
 

Preparation and Roasting
  1. Preheat oven to 425°F (220°C). Pat wings dry and place on a wire rack over a baking sheet.
  2. Roast for 30-35 minutes until the skin is golden and fat is rendered.
Glaze and Finish
  1. Simmer pineapple juice, brown sugar, soy sauce, garlic, ginger, and chili flakes. Add cornstarch slurry to thicken until viscous.
  2. Toss wings in glaze, return to rack, and bake for 8-10 minutes until charred edges appear.
  3. Top with sliced green onions and toasted sesame seeds before serving.

Notes

Ensure wings are bone-dry before roasting for the best skin texture.
Use canned pineapple juice for a more consistent sugar level than fresh.
