Main Ingredients
  • 6 cups fresh broccoli florets approx 500g, cut into small bite-sized pieces
  • 10 slices thick-cut bacon approx 250g, fried crispy and crumbled
  • 1 cup sharp orange cheddar cheese 150g, cut into 1/4 inch cubes
  • 1/2 cup red onion 60g, very thinly sliced into slivers
  • 1 cup mayonnaise 240ml, full fat for best texture
  • 3 tablespoons granulated sugar 36g
  • 2 tablespoons apple cider vinegar 30ml
  • 1/4 teaspoon salt and black pepper to taste

  • 1 Large Mixing Bowl Preferably ceramic or glass
  • 1 Whisk
  • 1 Skillet For frying bacon

Method
 

Preparation
  1. Place bacon in a skillet over medium heat. Fry until deep brown and very crispy. Drain on paper towels and crumble once cooled.
  2. Wash broccoli and dry completely. Cut into very small florets. Thinly slice the red onion into purple slivers and cube the cheddar cheese.
  3. In a bowl, whisk together mayonnaise, sugar, and apple cider vinegar until smooth and glossy.
  4. In a large ceramic bowl, combine broccoli, onions, cheese, and half the bacon. Pour dressing over and toss until generously coated. Top with remaining bacon.
  5. Refrigerate for at least 60 minutes before serving to allow flavors to meld.

Notes

Ensure the broccoli is completely dry after washing or the dressing will become watery.
For the best visual appeal, use a white bowl to make the colors of the broccoli and cheddar pop.
