  • 12 large Jalapenos Halved and deseeded
  • 8 oz Brie Cheese 225g, sliced into strips
  • 1 cup Fresh Blueberries 150g
  • 2 tbsp Honey 30ml
  • 1 tbsp Balsamic Vinegar 15ml
  • 2 tbsp Panko Breadcrumbs For garnish

  • 1 Small saucepan For the blueberry reduction

Method
 

Prep and Stuff
  1. Slice jalapenos in half lengthwise and remove seeds. Place on a baking sheet and lightly oil the skins for a charred effect.
  2. Place a strip of Brie cheese into each jalapeno half, ensuring it is slightly overflowing.
Bake and Glaze
  1. Bake at 400°F (200°C) for 12-15 minutes until cheese is bubbling and skins are blistered.
  2. In a saucepan, combine blueberries, honey, and balsamic. Simmer over medium heat until viscous and glossy.
  3. Drizzle the deep purple glaze over the poppers and top with scattered breadcrumbs.

Notes

For a smoother glaze, strain the blueberries through a mesh sieve.
Use high heat to ensure the jalapeno skins actually blister before the cheese completely runs out.
