Ingredients

Main Ingredients
  • 12 oz Corn Tortilla Chips Sturdy, restaurant-style
  • 2 cups Shredded Chicken Cooked and fibrous
  • 1.5 cups Monterey Jack Cheese Freshly grated
  • 1.5 cups Sharp Cheddar Cheese Freshly grated
  • 0.5 cups BBQ Sauce Tangy and glossy
  • 0.5 small Red Onion Thinly sliced
  • 0.25 cups Fresh Cilantro Roughly torn

Equipment

  • 1 Rimmed Baking Sheet Large size
  • 1 Cheese Grater For fresh shredding

Method

Assembly
  1. Arrange half the chips on a baking sheet, overlapping to create a solid base.
  2. Toss chicken with half the BBQ sauce and layer half the chicken and half the cheese over the chips.
  3. Repeat with remaining chips, cheese, and chicken to build vertical height.
Baking
  1. Bake at 425°F (220°C) for 8 minutes until cheese is melted.
  2. Broil for 1-2 minutes until cheese is blistered and bubbling with brown spots.

Notes

Use freshly grated cheese to ensure a professional-grade cheese pull.
Layer vertically to keep chips from getting soggy in the center.
