  • 1/2 cup (120ml) Balsamic Glaze thick reduction
  • 8 oz (225g) Mozzarella Cheese shredded or sliced
  • 1 cup (150g) Cherry Tomatoes halved
  • 1/4 cup (10g) Fresh Basil chopped
  • 2 tbsp (30ml) Olive Oil extra virgin
  • 1 tsp (5g) Sea Salt
  • 1/2 tsp (2g) Black Pepper

Method
 

Preparation and Searing
  1. Preheat oven to 400°F (200°C). Season chicken with salt and pepper. In an oven-safe skillet, sear chicken in olive oil for 3-4 minutes per side until golden brown.
  2. Place seared chicken in a baking dish. Top with mozzarella and scatter halved cherry tomatoes around the chicken.
  3. Bake for 12-15 minutes. Switch to broil for 2 minutes until the cheese shows golden spots.
  4. Drizzle with thick balsamic glaze and garnish with chopped fresh basil before serving.

Notes

Ensure the balsamic glaze is thick and syrupy, not thin like vinegar.
Let the chicken rest for 5 minutes after baking to keep it juicy.
