Preparation
- Cook elbow macaroni in salted boiling water for 2 minutes less than package instructions. Drain and set aside.
- Melt butter in a large saucepan over medium heat. Whisk in flour for 1 minute until a pale gold paste forms.
- Slowly whisk in milk and heavy cream. Simmer until the sauce is thick and glossy, then stir in 3 cups of cheddar until melted.
- Combine pasta and sauce. Layer half in a baking dish, add a layer of cheese, then the remaining pasta. Top with remaining cheddar and Monterey Jack.
- Bake at 375°F (190°C) for 20-25 minutes until you see bubbly browned spots and crispy edges. Garnish with parsley.
