  • 2 cups Full-fat Greek yogurt 480g, strained if possible
  • 1 large English cucumber 300g, grated and squeezed dry
  • 3-4 cloves Garlic finely minced
  • 2 tbsp Extra Virgin Olive Oil 30ml, plus extra for garnish
  • 1 tbsp Lemon juice 15ml, or red wine vinegar
  • 1 tbsp Fresh dill 4g, finely chopped
  • 1/2 tsp Sea salt to taste

Equipment

  • 1 Box Grater For grating cucumber
  • 1 Fine-mesh Sieve For draining moisture
  • 1 Cheesecloth or Kitchen Towel To squeeze cucumber dry

Method
 

How to make Authentic Tzatziki
  1. Grate the English cucumber and place in a sieve with salt. Let sit for 10 minutes, then squeeze firmly in a kitchen towel until dry.
  2. In a bowl, combine Greek yogurt, minced garlic, olive oil, and lemon juice until smooth and glossy.
  3. Fold in the dried cucumber and chopped dill. Serve in a rustic bowl with a swirl of olive oil and charred pita bread.

Notes

Make sure to use full-fat yogurt for the most authentic texture.
Always squeeze the cucumber twice to prevent a watery sauce.
