  • 4 large Vine-ripened Tomatoes Cut into large, jagged wedges
  • 2-3 Persian Cucumbers Unpeeled, sliced into thick rounds
  • 1 small Red Onion Thinly sliced into crescents
  • 0.5 cup (75g) Kalamata Olives Whole, pitted or unpitted
  • 7 oz (200g) Feta Cheese One large rectangular slab
  • 4 tbsp (60ml) Extra Virgin Olive Oil High quality Greek variety
  • 1 tbsp Dried Oregano Heavily dusted
  • 1 pinch Sea Salt To taste

Method
 

Vegetable Preparation
  1. Cut the ripe tomatoes into large, jagged wedges. Avoid making them too small; the rustic size is essential.
  2. Slice the unpeeled Persian cucumbers into thick rounds, approximately 1/2 inch thick.
  3. Halve the red onion and slice into very thin, crescent-shaped arcs.
Assembly
  1. In a shallow white ceramic bowl, toss together the tomato wedges, cucumber rounds, red onion, and whole Kalamata olives.
  2. Place the whole slab of feta cheese directly on top of the salad mound.
  3. Drizzle the olive oil generously over the vegetables and feta. Finish with a heavy dusting of dried oregano and a pinch of salt.
